Serious Indulgence
I haven’t had onion rings for over a decade… mostly because they seem to go straight to my thighs.
But a year ago I discovered that I’m allergic to wheat, eggs, dairy, and almonds. My culinary world grew very small—well, that’s being generous—tiny.
It was depressing. Especially because I like to cook. And I have four healthy, rapidly growing children. Do I keep making the foods they love and I make a separate meal for myself? That just sounds exhausting! But some days I do that while I’m on this journey of nourishing my body without four of my favorite foods.
My husband came home from his work BBQ with a huge ziptop bag full of left-over sliced onions. I had a box of Gluten-Free Choice Batter, which is phenomenally yummy, but a small 18 oz box is over $5.00 US. That little box wouldn’t make it through 2 meals with my family!
Fortunately, my daughter is is blessed and cursed with hyperosmia—a heightened sense of smell—we just call her the Nose. With her help and the ingredient list, we created a recipe very similar to Choice Batter at a fraction of the cost.
The Result?
We also did a side-by-side test of the two batters. My children chose the homemade recipe! And of course, I ate way too many!
Gluten-, Soy-, Dairy-, & Egg-Free Onion Ring Batter
1. Mix the following in a bowl
1 Cup Rice Flour
1 tsp Paprica
½ tsp Baking Powder
½ tsp Salt
½ tsp Onion Powder
½ tsp Garlic Powder
½ tsp Celery Seed
½ tsp Savory
½ tsp Ground Chili Powder
¼ tsp Black Pepper
2. Add water and let sit 5 minutes
1 Cup Water
3. Dip any meat or vegetable into the batter and fry in oil. Enjoy!
